Having a go and letting you know; Tunisia, I nearly cracked this one…

Dear LPG,
I have to make a confession. Once I have done my best to describe the culinary pitfalls I encounter while cooking each month I look to the next month very quickly to find out which countries celebrate their independence during that period and, having found this Tunisian dish I thought it would be really easy. I felt the need to impress after last month’s Lithuanian disaster (although I have to say the soup was very nice and in spite of the colour of my version of their national dish, we ate it. Once lockdown is finally over my Lithuanian relative has promised to show me how it is really done.
Having studied the video, I thought this was the ultimate in simple cooking and, to be fair the actual shallow frying of an egg in some really thin pastry parcels had to be the easiest thing I have attempted so far, but there is always something and the something in this case came when I tried to buy one particular ingredient. I took a look on the internet and discovered that ‘brik pastry sheets’ are not readily available in most shops. To be fair I did read that Fillo Pastry would do but after last month’s disaster I wanted to be authentic this month.
Having checked you tube again, I found that the ingredients were simple enough although I was a little worried about painting the mixture onto the base of a dry frying pan balanced over a pot of hot water on the hob, but I was pleasantly surprised at my results.
The rest was relatively easy and my fellow house inmates ate everything. So I think that I actually cracked this one although my folding prowess left a little to be desired.
Well having looked forward again, I thought it would be good to celebrate with Senegal on April 4th. This will also be Easter Sunday. I am going to try to produce a plate of Mafé, a stew which means that the emphasis will be on the taste rather than what it looks like although, if you are allergic to peanuts this will be one to watch rather than try.
