Dear LPG,
As promised I spent a couple of hours thinking Finnish and I have to say that when I first took a look at this recipe I thought it looked fairly strait forward. I have to say pastry with rice in it seemed reasonably easy and I was ready to give it a go.
There was only one vaguely challenging ingredient and I found it in Holland and Barrett so it was down to business. These recipes which use a cup as a measurement sometimes leave me a little confused because cups come in such varied sizes, but I did not have that many potential food tasters around on the day, so I found a relatively small cup and used it consistently.
Rice with milk in was a little foreign to my usual cooking especially with only salt to taste, but I did my best not to think of savoury rice pudding, and followed the instructions to the letter. The pastry however was a bit more challenging, and rolling it as thin as possible looked so easy on the video I watched in preparation. After a couple of ruptured disasters, I managed to make a few reasonably thin ones. I eventually mastered the thickness issues but the shape of my ovals were not that oval which showed when I got to the crimping and folding stage of the exercise.
As you can see from my pictures, my crimping skills and artistry need a bit of honing but they did not completely collapse and they were surprisingly tasty in spite of my interesting variation on the theme of their intended shape. For all that, can I wish all our Finnish readers a happy independence celebration…
Onwards and upwards to the new year and from what I have read India does not have an independence day but their Republic Day is celebrated on January 26th. Another thing that they don’t officially have is a national dish but there is a pretender to that throne. It is called Khichdi and I am going to give it a try in the new year.
