Curried Sweet Potato and Coriander Soup
A lovely creamy smooth soup.
Perfect for sweet potato lovers!
Serves 4
Oil - 1 tsp
Onions, peeled and chopped - 2 medium
Minced garlic - 1 tsp
Curry powder or red curry paste - 1 tbsp
Sweet potato, peeled and chopped - 2 medium
Chicken stock - 4 cups
Evaporated milk - ⅔ cup
Heat oil in a large saucepan. Add the onion and garlic and stir over medium heat until onion softens. Add the curry powder or red curry paste and cook for a further 1-2 minutes.
Add sweet potato and chicken stock and simmer for 10 minutes or until the sweet potato is soft.
Puree the mixture, add the evaporated milk and heat through without bringing to the boil.
Adjust seasonings to taste.
Serving Suggestion: serve sprinkled with chopped fresh coriander or parsley.
