Having a go: Samoa, I hope that I can chalk this one up as a real success…

When looking for this month’s culinary inspiration, in spite of the fact that I was in the kitchen, hard at it just last week with my Walnut- inspired experiment, as soon as I noticed the date of this taste of independence, I was drawn to make an early attempt at something worth a bit of national Day Pride.  I didn’t really know what it looked like or even what category of meal it might be part of, but my memories of the celebrated 2001 rock classic heavy metal music track which has the same name, got me focused. 

I am not sure if you can call music which is only 20 years old ‘classic’ but I thought putting the track on repeat as I worked could only do some good.  

I was even more focused once I had read the Ingredients list because there is something really settling about recognising every single item included.  Chop Sui or Sapa Sui, as one hears it referred to in Samoa. 

Implementation of its construction was very easy and the speed of the beat of the music seemed to inspire me to work considerably faster than I normally do.  

although the many different pictorial variations of how the finished dish is supposed to look left me wondering just how successful the result of my time spent cooking it was.  For all that, my version made an interesting meal on the day, and my taste-testing team agreed.    

Looking forward to July left me finding yet another country that I have never heard of before.  July 30th brings with it Vanuatu’s Independence Day and I have to say that their national dish intrigues me somewhat.  With this in mind, and in homage, I will be trying my hand at producing a plate of Laplap.
