Having a go: - Maldivian Mas Huni (with no shortcuts) restored my faith in my cooking …

Dear LPG readers,
After the disaster that was last month’s attempt at cooking. I decided on something pretty basic in an attempt to repair the plummeting level of my cooking confidence.
The recipe I attempted for this month was so straightforward that I don’t think that anyone could have got it wrong. The Maldives gave us a very unusual breakfast dish which only had five very recognisable ingredients and an equal number of instruction points. The most technical action needed was the peeling and slicing of an onion and I have managed that successfully in the past. I would say that, having checked a couple of the videoed versions where getting a hand well and truly involved in the mixing was demonstrated, for just one moment, I was tempted to put the kneading hook in my electric mixer. But I then remembered that it was trying to automate the action of grating something which left my last recipe in such a mess, and I soon worked out that getting stuck in with your fingers had to be the way to success.
So with no cooking of any kind, my version of Mas Huni looked pretty authentic, although it demanded an acquired taste which left my testing team with mixed reviews, but I liked it!
August 17th will bring us to the 66th anniversary of the day that Gabon declared its independence from France, which has to be the best reason to have a go at recreating their celebrated national dish, Poulet Nyembyw and my cooking pans will be ready!
