A two course pancake celebration perhaps?

Dear LPG,

 

Last year I missed this celebration day altogether and blamed the pandemic, which was then still a new concept that we were all getting used to.  So, just in case this third bout of prolonged lockdown which we are struggling through at the moment is insulating LPG readers from life as we knew it before the covid-19 struggle began, I have decided to remind everyone including myself that tomorrow will be pancake day.  I hope that tomorrow brings us a day when you pull out all the stops and top your pancakes with anything which will make your taste buds really happy before you get a second opportunity to revisit any new year’s resolutions which involved giving up something. I have no doubt that most of those have fallen flat by now.

 

 

Even though it seems as if it was just last week, Christmas happened well over a month ago, the new year is getting older by the day and being locked down is forcing the days to go slowly while the weeks fly by even more than usual.  Let’s face it, it happens during a relatively normal year because we are often too busy, but we still can’t get it right even though so many of us find ourselves locked down and practically doing nothing. 

 

Pancake day always conjures up thoughts of a bit of a celebration, so I hope that after the non-event that was last year, my words today will jog a few memories and get those frying pans doing what they do best in spite of the times we are living through.

 

It occurred to me that, with a bit of notice, a two course pancake meal might be the way forward tomorrow and I have found some savoury pancake recipes a day early so that readers can be prepared. 

 

 

I always think of Pancake day as an excuse to find something really different to put on top of my pancake and I have found a few recipes which I hope might fire the imaginations of those readers who still cook and are seriously finding it hard to find something new, different and relatively easy to make.
