Having a go; Syria I forgot one little ingredient and it put me back a whole day…

17 Apr 2022

Dear LPG,

I have no doubt that by the time one gets to retirement, they will have heard the word falafel even though most members of the UK’s population may not have actually tried one. Perhaps this is why I was looking forward to finding out a bit more about them.

When I took a look on line they looked simple enough to make so I jumped right in and made a promise to produce some to coincide with Syria’s big day.  I did take a quick look at the recipe when I first saw it and I wanted to use the one that promised authenticity.  I remember the bit about soaking the chickpeas for at least 18 hours but I forgot to add the Bicarbonate of soda and the morning after the night before they were nowhere as near as tender as I had expected, and with time running out, I decided to try to work with some of the peas anyway.

My first attempt resulted in very green insides but the second lot were not too bad at all, even though I say it myself.  A second attempt taught me not to play with them while they are in the fryer (a couple fell apart when I did that). A day later I definitely worked out how to get them looking a bit better.

Well looking forward got me focussed on Norway which celebrates its Constitution Day on May 17th when I hope to share my attempts at producing one of their national delicacies, Lefse. I look forward to improving on this month’s efforts then.
