Having a go: - Greece, I actually think that I did not do too badly this month…

Dear LPG, 

 

I have some really positive news this month, well relatively positive news anyway.  One might say that I surpassed myself when it came to getting started on this month’s recipe or so I thought. I chose a seriously super easy recipe.

 

The recipe that I chose to use had one little draw back which I missed until the day I went out to get the ingredients.   When doing my advance check, I recognised them all which is a bonus because if you know what you are dealing with, you also have a fair idea of how you should cook each element, but the thing I missed was that there were few quantities mentioned in the version that I chose.  

 

But I followed the recipe using my judgement and even though I think that I should have squirted a little less tomato puree and added a little more stock into the mix, it came out looking surprisingly authentic. I think that it looked a bit too red and could have been a tinge thinner but it was all good apart from that.  My taste testers approved and, the one who had given up meat for leant, said that she really did not miss the meat aspect and felt quite full having had a go at this vegetarian offering.  Sadly, my biggest disappointment was my camera work, I have a lot to learn about lighting but I think that the overall critique was ‘win win’.   

 

For next month I thought a trip to Zimbabwe just in time for their independence day celebration on the 18th might be a way forward, and I could not help but be intrigued by one of their national dishes which is called Ifisashi, although if you add a few tomatoes it seems to have more of a Zambian vibe.  It is vegetarian, which means it has to be good for you, and it has ingredients all of which I recognise.  What could go wrong?
