Carrot and Lentil Dahl

Dahl is an excellent way to eat lentils. This is a mild, sweet Dahl with a slight nutty taste. Add more curry powder if you like your food hot!

Serves 2
Oil - 1 tsp
Whole grain mustard - ½ tsp
Cumin - ½ tsp
Carrots, grated - 2 large
Vegetable stock - 500mls
Spilt red lentils, washed - ¼ cup
Peanut butter - 1 tbsp
Curry powder - 1 tsp
Pepper - To taste
Natural yoghurt - To garnish
Fresh coriander or mint, chopped - To garnish

1. Heat oil in a saucepan on medium heat.
2. Add wholegrain mustard and cumin and stir.
3. Add carrot and cook for 10 minutes allowing carrot to soften. Stir regularly.
4. Add stock and lentils. Simmer for 30 minutes.
5. Stir in peanut butter, curry powder and pepper.
6. Simmer for 5 minutes then serve.
7. Garnish with yoghurt and coriander or mint.

Serving Suggestion: Serve on rice, naan or pita bread.
