Cheese and Herb Omelette

Try this simple omelette. It's super tasty and easy to make.

Serves 2
Eggs - 4
Milk - 2 tbsp
Salt and pepper - To season
Parsley or fresh herbs, finely chopped - 2 tbsp
Margarine or butter - 2 tsp
Cheese, grated - 2-4 tbsp

Beat egg with milk, salt and pepper and herbs.
Melt margarine in pan and, when hot, pour in mixture.
Cook over moderate heat lifting mixture with a spatula so uncooked egg runs underneath.
Increase heat to brown omelette. When mixture is set sprinkle with grated cheese.
Loosen from pan with spatula and fold in half.
Turn onto warm serving plate.
Variation: replace grated cheese with finely chopped cooked ham or crisp bacon.
